Qui, circa 1.000 piccoli coltivatori conferiscono le loro ciliegie di caff\u00e8, dando vita a una produzione annua di circa 2.500 tonnellate. Accanto al caff\u00e8, i produttori coltivano banane e mais e riutilizzano la polpa del caff\u00e8, unita al compost, come fertilizzante naturale, promuovendo pratiche agricole sostenibili e rispettose dell\u2019ambiente.<\/p>\n<p data-start=\"687\" data-end=\"994\"><strong data-start=\"687\" data-end=\"702\">Lavorazione<\/strong><br data-start=\"702\" data-end=\"705\" \/>Il caff\u00e8 viene lavorato con il metodo lavato, una garanzia di eleganza e definizione aromatica. Dopo la spolpatura, le ciliegie fermentano e vengono accuratamente lavate, per poi essere essiccate lentamente su letti rialzati.
