Cascara is the husk that comes from the processing of natural java coffee beans. This coffee was previously fermented in tanks where pH, brix, and leachate or must release are controlled.
For the best extraction of flavors use a french press or tea strainers/filters.

ABOUT THE PRODUCER
Owned for 80 years by the family Lopez, passed on to 4 brothers in 2005 who separated the farm in two.
The main varietal is Castillo but nowadays is cultivated also Geisha and Java.
They also plant avocado and plantain. Avocado is planted separately; plantain is mixed with the coffee trees.
